350g cottage cheese
4 eggs
275g caster sugar
350g cream cheese
25g cornflour
1 lemon (zest and juice)
1 lime (zest and juice)
75g unsalted butter
350ml creme fraiche
Lemon curd
Base
275g plain flour
150g caster sugar
1 egg
150g unsalted butter
Put ingredients for base in food processor,combine.
Press half the mixture into bottom of 9inch tin (with release sides).
Bake to 10mins at 190C
Leave to cool
Press the remain mixture around the edge
Whizz the cottage cheese in food processor for 20secs
Whisk the eggs and sugar for 5 mins
Mix in the cottage and cream cheese
Sprinkle in the cornflour, lemon and lime and mix well
Stire in the melted butter and creme fraiche.
Pour mixture into tin
Bake for 2 hours at 150C
Turn out of tin and spread top with lemon curd
