Lemon Cheesecake
- 350g cottage cheese
- 4 eggs
- 275g caster sugar
- 350g cream cheese
- 25g cornflour
- 1 lemon (zest and juice)
- 1 lime (zest and juice)
- 75g unsalted butter
- 350ml creme fraiche
- Lemon curd
Base
- 275g plain flour
- 150g caster sugar
- 1 egg
- 150g unsalted butter
- Put ingredients for base in food processor,combine.
- Press half the mixture into bottom of 9inch tin (with release sides).
- Bake to 10mins at 190C
- Leave to cool
- Press the remain mixture around the edge
- Whizz the cottage cheese in food processor for 20secs
- Whisk the eggs and sugar for 5 mins
- Mix in the cottage and cream cheese
- Sprinkle in the cornflour, lemon and lime and mix well
- Stire in the melted butter and creme fraiche.
- Pour mixture into tin
- Bake for 2 hours at 150C
- Turn out of tin and spread top with lemon curd
