Poached Smoked Haddock

Smoked Haddock makes the perfect accompaniment to Waitrose fresh Jersey Royal potatoes and Delia adds a tasty twist to create a perfect Summer meal.

First lightly poach the smoked haddock in some milk then place it on a grill tray and add some strong Cheddar cheese mixed with breadcrumbs and put it under the grill. Keep the milk you used to poach the fish on the hob and add crème fraiche, butter and chives to create a delicious creamy sauce which you can dip your boiled potatoes into.
