The rowan berry jam is made from soft fruits that have been forgotten over time. The rowan tree grows spontaneously in poor and exploited soils. This plant flowers between May and June and it develops its fruits in September. When the rowanberries mature they have a purple color and a sweet, pleasant taste, while if the rowanberries have a yellow color they aren’t yet ready and have a sour taste. Rowanberries are rich in vitamins and minerals and they are antioxidants, in fact they prevent tumors. Rowanberries have vitamin C which strengthens the immune system. You can prepare excellent tea with flowers and rowan leaves, you can prepare flour with berries and with the fruits some liqueurs can be prepared.
In addition to these dishes you can cook rowan jam, good and easy to prepare at home.

At first pour the rowan berry ripe in a container, add some water and let it rest for 3 minutes. After that wash it carefully and extract the seeds of the fruit. Than bathe the pulps in a pot, adding lemon and water and let it warm up for 3 minute over low heat. Next add the sugar and mix it very well, it is recommended to close the pot with a lid and mix it with a wooden spoon. After 20 minutes it begins to compact and 35 minutes later of cooking the rowan berry jam is ready. If the jam isn’t thick enough, let it cooks for a few minutes. Switch off the fire and pour the rowan berry jam, without the preservatives, in some glass jars previously sterilized.
