Here's a fun solution - add them to a homemade pizza!
I love making homemade pizza because it seems to taste so much better, and it's also a fun activity to do with your kiddos.
1 pre-made pizza crust (I used an ultra-thin crust from target)
1/2 cup (or more) of your favorite pizza sauce (I used Rao's marinara sauce)
2-3 cups shredded mozzarella cheese
Your favorite veggies (I like to use sliced bell peppers, jalapeño peppers, cherry tomatoes, purple onion, banana peppers, etc)
Black pepper to taste
Fresh arugula or bay leaves (for topping)
Set your oven to 400 degrees F.
While oven heats, spread pizza sauce onto crust.
Add your veggies and then top with cheese.
Bake for about 10 minutes and enjoy!
