Sweet potato + egg = The perfect combination of savory and sweet 😍
These Twice Baked Veggie Stuffed Sweet Potatoes with Baked Eggs are the BEST thing since sliced bread, and I'm not kidding.

Serves one person (double the recipe for 2)
1 Sweet potato
1 Egg
1 Handful baby spinach
1/4 cup diced white onion
1 clove minced garlic
1 tsp red pepper flakes
1 Tbsp extra virgin olive oil
Black pepper to taste
1. Bake 2 sweet potatoes for an hour (unwrapped so the skin will be easy to pull off). Once they are finished, cut the sweet potatoes in half and scoop out the insides. Set aside in a bowl.
2. In a skillet, sauté onion, garlic, spinach, red pepper flakes, and black pepper in extra virgin olive oil together. (5-6 mins).
3. Combine the sweet potatoes with sautéed mixture, and scoop the mixture back into the potato shells, and create a dip in the center for the egg.
4. Crack an egg in the center, and baked for 15-20 mins on 375 degrees.
