Yet another birthday-themed recipe for the books, and this one is defintely a keeper! Today, I made a mug cake which only took my about 5 minutes altogehter.
One thing I love about mug cakes is that they save on having leftovers for days from an entire cake.
Also, mug cakes can be personalized to fit what ever flavor you are craving. Obviously, I have been craving birthday cake-themed recipes lately, so I had to give it a try!
This BIRTHDAY CAKE MUG CAKE was made with CLEAN and REAL ingredients like unbleached all purpose flour, honey, and unsweetened almond milk.

1/4 cup unbleached all-purpose flour
1/4 teaspoon baking powder
pinch of salt
4 tablespoons almond milk
1 tablespoon honey
1 tablespoons melted coconut oil
¼ teaspoon vanilla extract
1-2 tbsp vanilla icing (Simple Mills)
In a mug, blend together flour, baking powder, and salt. Add sweetener, coconut oil, and vanilla. Pour in some milk and mix until smooth. Add the rest of the milk and mix just until well blended.
Place mug into the microwave for 90–120 seconds. Cake should be risen and firm on top when fully cooked through. If it is not done in the amount of time listed, continue to cook in 15–20 second intervals.
