These chicken taco lettuce cups could be your dinner tonight!!
All you need are a few simple ingredients

1 pound ground chicken
1 bell pepper, diced
1/2 large yellow onion, diced
1 can black beans, drained and rinsed
1 can whole kernel corn, drained
1 tsp minced garlic
1-2 tbsp chili powder
1/2 tbsp ground cumin
1 tsp paprika
1 dash cayenne pepper
Black pepper to taste
1 head lettuce, cut into cup shapes
*Optional Toppings: shredded cheese, diced tomato, diced avocado, sour cream or Greek yogurt!
Cook ground chicken in a skillet over medium heat until brown/ fully cooked through. Remove chicken from skillet and allow it to drain off excess water. Wipe out skillet.
Add diced peppers and onion and garlic to skillet with olive oil, and sauté for 3-4 mins. Add spices, black beans, and corn to skillet, and allow to cook for 7-9 more mins.
Lastly, add cooked chicken to skillet, and store to combine.
Scoop out mixture into lettuce cups, and enjoy this delicious, high protein meal!
