I'm not going to lie.... these turned out AMAZING!
I have to admit, I was a bit skeptical when I saw that the batter is made with sweet potatoes, but hey... I am up for trying anything once!
Not only are these Sweet Potato Fudge Brownies tasty, they are also PACKED with NUTRIENTS.
The sweet potato provides vitamins A, B6, and C, potassium, and fiber.

1 medium sweet potato
1/2 cup creamy peanut butter
1/2 cup pure maple syrup
1/2 cup unbleached all-purpose flour
1/4 cup unsweetened cocoa powder
2 eggs
1 tsp pure vanilla extract
1 tsp baking soda
1/2 cup chocolate chips
Cook sweet potato in the microwave for 5-6 mins.
Combine all ingredients except chocolate chip in a food processor and blend until smooth.
Stir in chocolate chips and pour into a 9x9 baking pan that has been sprayed with cooking spray.
Bake at 375 F for 20 mins.
