The perfect on-the-go snack when you're running out the door to start your busy day!
These Peach Crumble Pancake Muffins were inspired and adapted by Rachel Mansfield and I am so impressed!
Instead of making a loaf bread, I decided to bake the batter in cute little cupcake liners!
You will also be surprised to learn that each muffin only has 129 calories and 5.7 grams of protein! I used the @krusteaz protein pancake mix because it is make with whole wheat flour, and you just cannot go wrong with that! This recipe turned out FANTASTIC!!
For batter:
2 1/2 c pancake mix (I used Krusteaz protein pancake mix)
1 1/3 c water
1 egg
3 tbsp melted butter (I used Smart Balance Original)
1/4 tsp ground cinnamon
2 medium peaches, chopped
For crumble topping:
1/4 cup pancake mix (I used Krusteaz protein pancake mix)
1/4 tsp ground cinnamon
2 tbsp coconut sugar
1 tbsp melted butter (I used Smart Balance Original)
Preheat oven to 350 degrees F, and spray cupcake liners with pam.
In a large bowl, combine pancake mix, water, egg, butter, and cinnamon.
Fold in peaches and spoon out into cupcake liners.
In a small bowl, combo crumble topping ingredients, and then sprinkle on top of muffins.
Bake for 35-40 minutes in the oven.
