These gooey, chocolatey cookies are a crowd favorite that you won't want to miss out on!
To make these just a bit healthier, swap the out the caramel for medjool dates! I guaranunteee you will be going back for seconds (and probably thirds) once you taste these!
Medjool dates are a great sub for caramel, you may even think they taste better than the store-bought version!
All you need is FIVE simple ingredients.
10 Medjool dates, pitted
1/2 cup chocolate chips
1/2 teaspoon coconut oil
45 pecan halves
1/8 teaspoon sea salt
Place dates into the bowl of a food processor and pulse a couple times. Add sea salt and pulse until the dates are completely chopped and form a large ball. Wrap in plastic wrap and store in the freezer for 1 hour.
Remove date ball from freezer and unwrap. Pinch off small pieces of the date ball and roll into small balls. Place on parchment paper. Add 3 pecans to each ball and mold the dates around them.
Lay each turtle pecan-side down on the parchment
Melt the chocolate with coconut oil in the microwave until smooth.
Using a spoon cover each turtle with melted chocolate. Once they’re all covered, move the turtles into the freezer to allow the chocolate for 10-15 mins. Serve and enjoy!
