Chili in the middle of summer because why not??😍😍😍
This SWEET POTATO BLACK BEAN CHILI was DANG GOOD, and I know you’ll love it too!
You just need a few ingredients to throw this bowl together.
1 medium sweet potato, diced
1 white onion, diced
1 28 oz can black beans, washed and drained
1 28 oz can tomato sauce (I like to use the no salt added one!)
1 cup water
2 tbsp chili powder
2 tbsp extra virgin olive oil
2 tsp minced garlic
1 dash cayenne pepper
1 pinch ground cinnamon
* optional toppings: crackers, shredded cheese, or my favorite - sliced avocado!
Heat olive oil in a large pot over medium high heat. Once heated, add sweet potatoes and sautéed for 7-8 minutes stirring occasionally.
Next, add onion and garlic to pot. Sauté for another 2-3 minutes. Add all spices.
Add black beans, tomato sauce, and water to pot, and allow to simmer for about 25 minutes.
Serve with crackers, shredded cheese, or my favorite - sliced avocado! Enjoy!!
