Do you have an overly ripened banana lying around your kitchen that you need to use up?
This happens to me ALL THE TIME, so I had to find a way.
These Banana Bread Cookies were inspired by Ambitious Kitchen and I am LOVING them!
These delicious cookies took less than 30 minutes to bake, and I love that the ingredient list is minimal and wholesome.
Here's what you will need:
2 tbsp melted butter (I used Smart Balance Original)
1 mashed ripe medium banana
1/4 cup organic coconut sugar
1 egg
1 tsp pure vanilla extract
1 1/4 cup packed fine blanched almond flour
1/4 cup coconut flour
1/2 tsp baking soda
1 tbsp chopped pecans
1 tsp ground cinnamon
1/4 tsp sea salt
2 tbsp melted vanilla frosting (I used Miss Jones Vanilla Frosting)
Combine the first five ingredients into a large bowl until smooth.
Next, add remaining ingredients, and mix until just combined.
Allow dough to chill in the fridge for 5 minutes while you preheat your oven to 350 degrees F.
After lining a baking sheet with parchment paper, rolls dough into golf sized balls and place on parchment.
Gently flatten eat dough ball with a fork, and then bake for 9-12 minutes.
Remove cookies from oven, and allow them to sit for 5-10 minutes.
While cookies cool, melt frosting in the microwave for 30-60 seconds until drippy.
Drizzle each cookie with frosting, and enjoy!
