Everyone seems to love the trendy TikTok feta pasta, so I thought I’d put a little twist on it. Instead of using feta cheese, I used goat cheese with a drizzle of honey. The texture turned out so creamy and smooth!
I also would like to add that goat cheese has some wonderful health benefits!
Here are a few:
6g protein per 1oz serving
Great for bone health due to calcium
Great for digestion due to A2 beta casein
2 cup cherry tomatoes
8 oz plain goat cheese
9oz pasta (I used Barilla Chickpea Rotini Pasta)
2 cups baby spinach leaves
2 tbsp extra virgin olive oil
1 tbsp organic honey
Black pepper to taste
Preheat oven to 400 degrees F.
Place goat cheese in the middle of a 8x8 baking dish.
Surround the cheese with cherry tomatoes and drizzle with olive oil and honey. Add black pepper to taste.
Place dish in the oven, and bake for 25 minutes.
While pasta bakes, cook your pasta according to the box instructions.
Remove dish from oven and mix tomatoes and cheese until combined.
After draining pasta, pour into dish and mix well.
