I know y'all are going to love this one!
If you're like me, you LOVE pasta, or anything Italian for that matter. Cheese is also a must, and this recipe has two kinds - ricotta and parmesan!
You can make this dish in less than 30 minutes with minimal prep!
I also love this recipe because you can pair it with so many different options! For example, add grilled chicken with a side Greek salad for a balanced, satisfying meal!

300 g dry pasta (I used angel hair; brand - Barilla)
1 cup ricotta cheese
2 tbsp olive oil
2 tbsp lemon juice
zest of 1 lemon
2 garlic cloves, minced
1/2 tsp salt
1/2 tsp black pepper
1/2 cup grated parmesan cheese
Optional for garnish: parmesan cheese, lemon zest & black pepper
Cook the pasta according to package directions. Reserve approximately 1/2 cup pasta water before draining.
Blend ricotta cheese, olive oil, lemon juice, lemon zest, garlic, parmesan cheese, and salt and pepper together in a food processor until well combined. Once sauce is made, transfer to a large pot on the stove and turn the burner on to medium-heat, beginning to warm up the sauce.
Allow sauce to warm up for 3-5 minutes, stiring continuously.
Add the cooked pasta to the pot, and then add up to 1/2 cup of the reserved pasta water and stir vigorously into the pasta. Serve and garnish with more parmesan cheese, lemon zest and pepper if desired!
