These Sweet Potato Black Bean Burritos are great for breakfast, lunch, or dinner as well as meal prep for breakfast on the go!
I am a pretty busy person, so I love finding recipes that are easy to make and freeze well. What makes this one even better is the fact that it can be warm up easily in the microwave and eaten on my way out the door!
Oh yeah, and it is EXTRA FILLING. These protein-packed burritos are loaded with complex carbohydrates including beans and sweet potatoes! This means your body will take longer to break down the sugars, and you will feel full longer! How great is that?

2 8-inch whole wheat tortillas
1 medium sweet potatoes
1 (15 ounce) can black beans, rinsed and drained
1/2 teaspoon cumin1/4 teaspoon chili powder
a few dashes of red pepper flakes, optional
2 large eggs
1/2 avocado, diced
1/2 cup shredded mexican
2 tbsp red enchilada sauce
Cook sweet potatoes (microwave 4-6 min or cook in oven 45 mins on 375 degrees). Once cooked, mash with a fork and set aside.
Add black beans and spice to a pot and cook on low for 5-6 mins. In the meantime, scramble eggs in a skillet.
Place tortillas in microwave for 30 seconds before adding anything. Once warm, spread out the mashed sweet potato one each tortilla. Add all other ingredients and drizzle red enchilada sauce on top. Roll into a burrito and ENJOY!
