QUICK AND EASY DINNER RECIPE!
If you’re like me, I’m always in a rush because life is just busy. I always love a good recipe that won’t take me half the day to prepare for. These BLACK BEAN CHICKEN QUESADILLAS took me LESS THAN 30 minutes to make, and they turned out DELICIOUS!
1/2 pound pre cooked fajita chicken strips @tyson
1/2 white onion, chopped
1 bell pepper, chopped
1 bag quinoa & brown rice @seedsofchange
1-15oz can black beans
3 tbsp chili powder (more for spicy)
2 tbsp ground cumin
6 flour tortillas
1/2 cup mexican blend shredded cheese
3 tbsp olive oil, divided
TOPPINGS (Optional): 1 diced Roma tomato, sour cream, minced cilantro, taco sauce
Add pepper and onion to a skillet with 2 tbsp of olive oil and sauté on medium high for 2-3 mins until onions are translucent. Add spices and cooked for about 2-3 mins.
Add pre cooked chicken to skillet and stir until well combined. Allowed to simmer for 5-6 mins.
Lightly cover both sides of each tortilla with remaining olive oil and add the cheese and filling. Top with more cheese if desired.
Fold tortillas into half and place in over for 4-5 mins. Make sure you keep an eye on them because the will burn fast!!
Remove from oven and cut into triangles (1 tortilla makes 2 or 3 triangles!)
Serve with toppings and enjoy!!😊😊
