Ingredients:
1 lb (450g) ground chicken
1 egg
1½ cup breadcrumbs
2 cloves garlic, minced
1 tablespoon ginger, minced
Salt and pepper to taste
1 tablespoon olive oil
1 can (14 oz) coconut milk
2 tablespoons red curry paste
1 tablespoon soy sauce
1 teaspoon brown sugar
Juice of half a lime
Fresh cilantro, chopped, for garnish
Instructions:
In a bowl, combine ground chicken, egg, breadcrumbs, garlic, ginger, salt, and pepper.
Mix until just combined.
Form the mixture into 1-inch meatballs by hand or using a scoop.
Heat olive oil in a large skillet over medium heat.
Add the meatballs and cook, turning occasionally, until browned on all sides.
In the same skillet, whisk together the coconut milk, red curry paste, soy sauce, and brown sugar. Bring to a gentle simmer.
Return the meatballs to the skillet and simmer in the sauce until fully cooked and tender.
Finish with a squeeze of lime juice and sprinkle with chopped cilantro before serving.
