2 medium zucchini, cut into 1/4" slices
2 T. Olive oil
1/2 c. Seasoned bread crumbs
1/4 c. Shredded Parmesan (I would change to grated)
Preheat oven to 450 degrees.
Line a baking sheet with parchment paper.
Mix the crumbs and cheese together on a plate.
Place oil and vegetable slices in a zip top bag. Toss to coat.
Press zucchini pieces into the crumb mixture on both sides.
Lay in a single layer on prepared baking dish. Bake for 30 minutes until brown and crispy.
Serve with your favorite sauce.
