1 c. orzo pasta
3/4 c. half and half
1/2 c. shredded Gruyere cheese
1 T. fresh lemon juice
1 T. sliced scallions
Bring a pot of salted water to a boil. Cook the orzo according to the package directions. Drain and return to the pot.
Add the half and half and cook over medium heat, stirring until slightly thickened, about 1 minute.
Remove from the heat; stir in the cheese. Season with salt & pepper.
Sprinkle with the scallions when serving.
