Grilled Swordfish with Lemon, Mint and Basil
1/2 c. Olive Oil
3 T. chopped fresh mint leaves
3 T. fresh lemon juice
1 T. chopped fresh basil
1 garlic clove, minced
salt and fresh ground pepper
4 (5-6 ounce) swordfish steaks
Prepare the grill (medium high heat).
Whisk the oil, mint, lemon juice, basil and garlic in a small bowl. Season with salt and pepper.
Brush both sides of the fish with the oil mixture.
Place the fish on an oiled grill pan on the hot grill. Grill the steaks for 3-4 minutes. Brush the fish with the oil mixture and flip to the other side. Grill for 3-4 minutes more, until cooked through.
Serve with fresh lemon wedges.
