Spicy Asian Cucumbers

1 English cucumber (If using a regular cucumber, peel and remove large seeds), chopped

1 tsp. kosher salt + more for seasoning

1 T. rice vinegar

2 tsp. sugar

2 tsp. soy sauce

1/2 tsp. sesame oil

2 sliced scallions

1 minced garlic clove

pinch of crushed red pepper

Place the cucumber in a small bowl. Sprinkle with 1 tsp. salt and let stand for 10 minutes.

While cucumber is standing, whisk together the rice vinegar, sugar, soy sauce, sesame oil, scallions, garlic and red pepper.

Drain the cucumbers.

In a small bowl combine the dressing and cucumbers. Season with salt to taste. Chill.
