Rich Meat Sauce

2-3 lb. chuck roast, trimmed

olive oil

salt and pepper

2 medium onions, peeled and chopped into quarters

3 cloves of garlic, rough chopped

1 large can of diced tomatoes

1 T. dried basil

pasta such as spaghetti

grated parmesan for serving

Preheat the oven to 300 degrees.

Season the meat with salt and pepper.

Heat about a tablespoon of oil in a dutch oven. Brown the meat on both sides.

Add the onions, garlic and basil.

Pour the tomatoes over all.

Cover and place in the oven for 2 1/2 hours until meat is fork tender and shreds easily.

Cook pasta according to package directions. Serve meat over the pasta and garnish with grated cheese.
