2 c. kale leaves
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1 T. sugar
1/3 c. cold butter
1 egg
3/4 c. buttermilk
1/4 c. pumpkin puree
3/4 c. cheddar cheese, grated
Preheat oven to 375.
Steam the kale for a minute or 2, just to blanch. I did this in the microwave with 1 T. water on high for 1 minute. Squeeze out any excess water and chop fine.
Blend the flour, salt, baking soda, baking powder and sugar together. Cut in the cold butter with a pastry blender or fork,
In a small beat the egg, then add the buttermilk, continue to beat until well combined. Add egg mixture, pumpkin, kale and cheese to the flour mix. Mix with a fork just until combined.
Form dough into a 10" circle and cut into 8 wedges. Place wedges on a parchment lined baking sheet. Bake for 25 minutes until lightly browned.
