Quick Apple Streusel Cake

1 1/2 c. flour

2 1/4 tsp. baking powder

1/2 c. sugar

1/2 tsp. salt

1/2 tsp. cinnamon

1 egg

1/2 c. milk

1/4 c. vegetable oil

1 1/2 c. chopped Granny Smith apples (2-3 apples), chopped

Topping:

1/4 c. sugar

1/4 c. flour

2 T. butter

1/2 tsp. cinnamon

Preheat the oven to 400 degrees.

In a large bowl combine the flour, baking powder, sugar, salt and cinnamon.

In a small bowl whisk together the egg, milk and oil.

Pour wet ingredients into dry and mix to combine well.

Fold in the apples.

Pour into a greased 8 X 8 pan.

In a small bowl combine the sugar, flour and cinnamon. Cut in the butter with a fork until crumbly.

Evenly sprinkle the topping over the batter.

Bake 25-30 minutes until a toothpick comes out clean.

Definitely serve warm with ice cream!
