Asian Tuna Lettuce Wraps

1 can of tuna, drained well

1 carrot cut into matchsticks

1 stalk of celery, sliced thin

1 green onion, sliced thin

1 T. sliced almonds

Fresh Basil leaves, sliced thin

4 lettuce leaves

1 tsp. rice vinegar

1 tsp. soy sauce

1/2 tsp. sesame oil

2 tsp. vegetable oil

1/8 tsp. crushed red pepper

Whisk together vinegar, soy sauce, sesame oil, vegetable oil and red pepper.

In a medium bowl combine tuna, carrot, celery, onion and almonds.

Add the dressing and toss to coat well.

Place a scoop of salad in the center of each lettuce leaf. Sprinkle with fresh basil.
