Caramelized Onion Dip

2 large or 4 small onions

1 T. butter

1 T. olive oil

1/8 tsp. cayenne pepper

1 tsp. kosher salt

1/4 tsp. black pepper

4 oz. cream cheese

1/2 c. sour cream

1/2 c. mayonnaise

Lice the onions in 1/8 inch slices. In a heavy bottom skillet on medium heat add the olive oil and butter.

When butter is melted add the sliced onions, cayenne pepper, salt, and black pepper.

Cook for about 10 minutes, stirring occasionally.

When onions are soft and starting release their liquid, turn the heat to low. Slowly cook the onions for about 20 minutes, until almost like a paste,

In a bowl combine the cream cheese, sour cream and mayonnaise. Mix till smooth.

Add the onions and stir until well combined.

Serve with crackers.
