1/2 c. frozen broccoli florets-you can use fresh, simply pre-cook.
1/4 c. frozen corn
1 T. fresh chopped chives
Black pepper to taste
2 eggs
1 tsp. olive oil
A sliver of butter
1/4 c. flaked cooked salmon
1 T. grated Parmesan
Preheat broiler to high.
Place the broccoli and corn in a microwaveable bowl. Microwave 45 seconds on high to warm.
Beat the eggs with the chives and black pepper.
Melt the butter in the olive oil in an 8" oven proof skillet.
Pour in the beaten eggs.
As the egg begins to set, pull the edges towards the center to keep the egg cooking evenly.
Sprinkle the vegetables and salmon onto the egg. With a rubber spatula, push the mixture around slightly.
Sprinkle the cheese on top. Place under the broiler until brown and bubbly.
