1 large, or 2 small cucumbers, peeled and chopped
1 red bell pepper, large diced
2 tomatoes, large chopped
1/4 c. red onion, diced
Feta cheese
Kalamata (if you must!)
Vinaigrette:
2 cloves garlic, minced
1 tsp. dried oregano
1/2 tsp. Dijon mustard
1/4 c. red wine vinegar
salt and fresh ground black pepper
1/2 c. olive oil
Combine the cucumber, tomato, onion and pepper in a large bowl.
In a small bowl, combine the vinaigrette ingredients and whisk until smooth.
Pour the dressing over the vegetables and gently toss to coat.
Add the Feta and olives.
