Lime Glazed Shrimp

1/4 c. honey

Zest and juice of 1 lime

1 T. vegetable oil

2 minced garlic cloves

1/2 tsp. red pepper flakes

1/2 tsp. salt

24 peeled and deviened large shrimp (I used 10 jumbo shrimp)

Soak 4 wooden skewers in water for at least 30 minutes. Heat broiler (You could do these on the grill if you choose).

In a small saucepan, combine honey, lime zest and juice, oil, garlic, red pepper flakes, and slat. Bring to a boil and cook until thickened, about 7 minutes.

Skewer the shrimp. Place on a rimmed baking dish. Brush with the glaze. Broil 3 minutes.

Flip and brush with glaze. Cook until shrimp are opaque and glaze begins to brown, 3-4 minutes more.
