Tex Mex Chicken Skillet

What you need:

    • 2 Tbsp. oil
    • 2 lb. chicken breasts, cubed
    • Salt and pepper to taste
    • 2 tsp. chili powder
    • 1/4 tsp. cumin
    • 1/2 tsp. garlic powder
    • 4 oz. cream cheese
    • 3 cups cooked rice
    • 1 can corn, drained
    • 1 can black beans, rinsed and drained
    • 1 cup salsa
    • Garnishes: chopped cilantro, sour cream, guacamole, etc.

Directions:

    1. Heat oil in a large, deep skillet over medium-high heat. Add chicken to skillet and sprinkle with seasonings. Cook until done.
    2. Add cream cheese and stir until it is melted.
    3. Then add rice, corn, black beans, and salsa. Heat through.
    4. Serve topped with desired garnishes.
