Beef Burrito Skillet
What you need:
- 1 lb. ground beef
- 1 pkg. taco seasoning mix
- 1 can (15.5 oz.) red kidney beans, drained and rinsed
- 1 cup salsa
- 1 cup water
- 4 tortillas, cut into 1-inch pieces
- 1 1/2 cups shredded Colby Jack or Cheddar cheese
- Sour cream
- Green onions, sliced
- Roma tomato, diced
Directions:
- Cook ground beef in a deep skillet over medium-high heat until done.
- Add taco seasoning, water, salsa, and beans and stir.
- Bring to a simmer and then cook for 5 minutes.
- Top with tortilla pieces and cheese. Cover and heat until cheese has melted completely.
- Remove from heat and top with sour cream, green onions, and tomato.
