Grilled Hasselback Fajita Chicken
What you need:
- 4 chicken breasts
- 2 Tbsp. olive oil
- Taco seasoning
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- Shredded queso quesadilla cheese
Directions:
- Preheat grill to medium-high heat.
- While your grill preheats, slice horizontal cuts in each chicken breast.
- Rub each chicken breast with olive oil and taco seasoning. Then stuff each cut with bell peppers and onion.
- Cook chicken on grill for 15 minutes.
- Remove and top with cheese. Grill for another 5 minutes or until cheese is melted.
