Grilled Hasselback Fajita Chicken

What you need:

    • 4 chicken breasts
    • 2 Tbsp. olive oil
    • Taco seasoning
    • 1 red bell pepper, thinly sliced
    • 1 green bell pepper, thinly sliced
    • 1 small red onion, thinly sliced
    • Shredded queso quesadilla cheese

Directions:

    1. Preheat grill to medium-high heat.
    2. While your grill preheats, slice horizontal cuts in each chicken breast.
    3. Rub each chicken breast with olive oil and taco seasoning. Then stuff each cut with bell peppers and onion.
    4. Cook chicken on grill for 15 minutes.
    5. Remove and top with cheese. Grill for another 5 minutes or until cheese is melted.
