Cheesy Bacon Breakfast Casserole

What you need:

    • 1/2 loaf French bread, broken into cubes
    • 6 eggs
    • 1 1/2 cups cheddar cheese
    • 1 cup milk
    • Thick cut bacon, cooked and chopped
    • Salt and pepper, to taste
    • Fresh herbs for serving (like rosemary, basil, etc.)

Directions:

    1. Place cubes of bread into a greased baking dish.
    2. In a medium-sized bowl, mix together eggs, cheese, and milk. Season with salt and pepper.
    3. Pour egg mixture over the bread and let sit for about 5 minutes to allow it to soak into the bread. Then top with bacon.
    4. Bake in a preheated 350* oven for 25 to 30 minutes or until eggs are set.
    5. Remove from the oven and top with fresh herbs, if desired.
