Slow Cooker Sausage & Corn Chowder

What you need:

    • 1 lb. breakfast sausage
    • 28 oz. frozen potatoes o'brien
    • 1 can (14 oz.) creamed corn
    • 1 large carrot, chopped
    • 3 cups chicken broth
    • 1 can (12 oz.) evaporated milk
    • 1 1/2 cup shredded mild cheddar cheese, plus some for serving
    • 1/2 tsp. salt
    • 1/2 tsp. ground black pepper

Directions:

    1. Brown and crumble breakfast sausage over medium high heat. Then add to slow cooker.
    2. Add potatoes, corn, carrot, and chicken broth.
    3. Cover and cook on LOW for 8 hours or on HIGH for 4 hours.
    4. Then mash about 1/2 of the potatoes and add cheese, salt, pepper, and evaporated milk.
    5. Cook on LOW for 15 minutes.
    6. Season with salt and pepper to taste and serve topped with additional cheese, if desired.
