Creamy Cauliflower Casserole

What you need:

    • 1 head cauliflower, chopped in large pieces
    • 2 cups sour cream
    • 1 1/2 cups shredded cheddar cheese
    • 6 green onions, chopped
    • 10 slices bacon, cooked and crumbled
    • 1/2 tsp. salt
    • 1/8 tsp. black pepper

Directions:

    1. Steam cauliflower for about 10 minutes or until tender. Then chop into small pieces. Transfer to a large bowl.
    2. Add sour cream, half the cheddar cheese, half the green onions, half the bacon, and salt and pepper. Stir together until combined.
    3. In a greased 2-quart baking dish, spread mixture evenly. Top with remaining cheddar cheese and bacon.
    4. Bake in a preheated 350 degree oven for 20 minutes.
    5. Top with green onions and serve.
