Creamy Cauliflower Casserole
What you need:
- 1 head cauliflower, chopped in large pieces
- 2 cups sour cream
- 1 1/2 cups shredded cheddar cheese
- 6 green onions, chopped
- 10 slices bacon, cooked and crumbled
- 1/2 tsp. salt
- 1/8 tsp. black pepper
Directions:
- Steam cauliflower for about 10 minutes or until tender. Then chop into small pieces. Transfer to a large bowl.
- Add sour cream, half the cheddar cheese, half the green onions, half the bacon, and salt and pepper. Stir together until combined.
- In a greased 2-quart baking dish, spread mixture evenly. Top with remaining cheddar cheese and bacon.
- Bake in a preheated 350 degree oven for 20 minutes.
- Top with green onions and serve.
