Perfectly Made Schnitzel
What you need:
- 4 boneless pork chops
- Salt and pepper
- 1/2 cup all-purpose flour
- 2 large eggs, lightly beaten
- 3/4 cup plain bread crumbs
- Oil for frying
- Lemon
- Fresh parsley
Directions:
- Flatten pork chops as thin as you can get them - about 1/4 inch is perfect. Season with salt and pepper.
- Mix flour with 1 tsp. salt in a shallow dish. Place eggs in a shallow bowl and bread crumbs in another shallow dish/bowl.
- Dredge pork chops in flour, then egg, then breadcrumbs. Don't let the schnitzel sit around for too long - you will want to fry them as soon as possible.
- In a large, deep skillet, heat enough oil to coat the bottom of the pan. Fry schnitzel for 2 to 3 minutes per side and then transfer to a paper towel lined plate.
- Serve immediately with lemon and parsley.
