One Pot Chicken Alfredo
What you need:
- 3 Tbsp. olive oil
- 1 to 2 lb. chicken breasts, diced into bite-sized pieces
- 2 cloves minced garlic
- Salt and pepper to taste
- Garlic powder to taste
- 14 oz. chicken broth
- 1 cup half and half or heavy cream
- 1/2 lb. spaghetti, uncooked
- 2 cups Parmesan cheese
- Parsley, for garnish
- Bacon bits, for garnish
Directions:
- Heat olive oil over medium-high in a deep skillet. Season chicken with garlic, salt, and pepper and cook in skillet for 6 minutes.
- Add garlic and cook for 30 seconds.
- Then add pasta, chicken broth, and half-and-half. Bring to a boil.
- Then cover and reduce heat to medium low and simmer for 15 to 20 minutes until pasta is cooked. Stir often. If needed, add half-and-half to loosen it up some.
- Remove from heat and stir in Parmesan cheese.
- Serve topped with sprinkle parsley and bacon crumbles.
