Crockpot Italian Chicken and Quinoa Soup

What you need:

    • 2 small chicken breasts
    • 1 cup chopped yellow onion
    • 1 cup chopped celery
    • 1 cup diced carrots
    • 1 1/2 tsp. minced garlic
    • 3/4 cup uncooked quinoa
    • 1 can (14.5 oz.) fire roasted diced tomatoes
    • 6 cups chicken broth
    • 1/4 tsp. red pepper flakes
    • 1 tsp. Italian seasoning
    • 2 tsp. dried oregano
    • 1 Tbsp. dried basil
    • Salt and pepper to taste
    • Parmesan cheese

Directions:

    1. Place chicken breasts, onion, celery, carrot, garlic, quinoa, and diced tomatoes into a greased crockpot.
    2. Add chicken broth and seasonings.
    3. Cover and cook on HIGH for 3 to 5 hours or until quinoa has popped and chicken shreds.
    4. Remove chicken and shred with two forks. Place back into crockpot.
    5. Serve topped with Parmesan cheese.
