Crockpot Italian Chicken and Quinoa Soup
What you need:
- 2 small chicken breasts
- 1 cup chopped yellow onion
- 1 cup chopped celery
- 1 cup diced carrots
- 1 1/2 tsp. minced garlic
- 3/4 cup uncooked quinoa
- 1 can (14.5 oz.) fire roasted diced tomatoes
- 6 cups chicken broth
- 1/4 tsp. red pepper flakes
- 1 tsp. Italian seasoning
- 2 tsp. dried oregano
- 1 Tbsp. dried basil
- Salt and pepper to taste
- Parmesan cheese
Directions:
- Place chicken breasts, onion, celery, carrot, garlic, quinoa, and diced tomatoes into a greased crockpot.
- Add chicken broth and seasonings.
- Cover and cook on HIGH for 3 to 5 hours or until quinoa has popped and chicken shreds.
- Remove chicken and shred with two forks. Place back into crockpot.
- Serve topped with Parmesan cheese.
