Spicy Cabbage with Mashed Potatoes
What you need:
For the cabbage:
- 4 strips bacon, cut into 1-inch pieces
- 1 medium onion, chopped
- 1 large head cabbage, cored and shredded
- 1 can (15 oz.) diced tomatoes
- 1/4 tsp. cayenne pepper
- 1 Tbsp. hot sauce
- Salt and pepper to taste
- 1 pkg. kielbasa, cut into 1-inch pieces
For the potatoes:
- 3 medium potatoes, peeled and cut into chunks
- 3 Tbsp. butter
- 3 oz. cream cheese
- 3 Tbsp. milk
- Salt and pepper to taste
Directions:
- Cook bacon in a large pot over medium heat until crispy. Remove to a paper towel-lined plate.
- Add onion to pot and cook until softened.
- Add cabbage and tomatoes. Cover and cook for about 10 minutes, stirring occasionally.
- Season with cayenne, hot sauce, and salt and pepper (to taste). Cook uncovered for about 10 more minutes.
- Add kielbasa, cover, and cook for 5 to 7 more minutes or until kielbasa is heated through. Add bacon back into the pot.
- Meanwhile, cover potatoes with water in a pot and bring to a boil over medium-high heat.
- Cook until fork tender, then drain, and put back in the pot.
- Add butter, cream cheese, milk, and salt and pepper (to taste). Mash.
- Serve kielbasa and cabbage over the top of the mashed potatoes.
