Spicy Cabbage with Mashed Potatoes

What you need:

For the cabbage:

    • 4 strips bacon, cut into 1-inch pieces
    • 1 medium onion, chopped
    • 1 large head cabbage, cored and shredded
    • 1 can (15 oz.) diced tomatoes
    • 1/4 tsp. cayenne pepper
    • 1 Tbsp. hot sauce
    • Salt and pepper to taste
    • 1 pkg. kielbasa, cut into 1-inch pieces

For the potatoes:

    • 3 medium potatoes, peeled and cut into chunks
    • 3 Tbsp. butter
    • 3 oz. cream cheese
    • 3 Tbsp. milk
    • Salt and pepper to taste

Directions:

    1. Cook bacon in a large pot over medium heat until crispy. Remove to a paper towel-lined plate.
    2. Add onion to pot and cook until softened.
    3. Add cabbage and tomatoes. Cover and cook for about 10 minutes, stirring occasionally.
    4. Season with cayenne, hot sauce, and salt and pepper (to taste). Cook uncovered for about 10 more minutes.
    5. Add kielbasa, cover, and cook for 5 to 7 more minutes or until kielbasa is heated through. Add bacon back into the pot.
    6. Meanwhile, cover potatoes with water in a pot and bring to a boil over medium-high heat.
    7. Cook until fork tender, then drain, and put back in the pot.
    8. Add butter, cream cheese, milk, and salt and pepper (to taste). Mash.
    9. Serve kielbasa and cabbage over the top of the mashed potatoes.
