Oven Baked Schnitzel Burgers

What you need:

    • 8 boneless pork chops
    • Salt and pepper to taste
    • 2 eggs, lightly beaten in a shallow bowl
    • 2/3 cup dry breadcrumbs
    • 1/3 cup shredded Parmesan cheese
    • 1/3 cup olive oil
    • 1 tsp. paprika
    • 4 hamburger buns
    • 4 small cheese slices
    • Ketchup
    • Optional toppings: sliced tomato, sliced cucumber, red onion, arugula or other leafy green

Directions:

    1. Pat pork dry and flatten each to 1/2 inch or less thickness. Season each with salt and pepper.
    2. In a shallow bowl, mix together breadcrumbs and Parmesan.
    3. Mix olive oil and paprika in a small bowl.
    4. Line a baking sheet with foil and lightly brush with oil.
    5. Dredge pork through beaten eggs then breadcrumbs. Place on baking sheet and lightly brush with oil. It's okay if you have leftover oil.
    6. Bake in a preheated 430 degree oven for about 10 minutes. Flip and bake for another 10 minutes.
    7. Top each hamburger bun with pork, cheese, and ketchup, plus any additional toppings you desire. Serve immediately.
