Ham & White Cheddar Beer Cheese Soup

What you need:

For the soup:

    • 4 Tbsp. unsalted butter
    • 1 small onion, diced
    • 2 cloves minced garlic
    • 1/2 cup all purpose flour
    • 1/2 tsp. salt
    • 1/2 tsp. pepper
    • 3/4 tsp. dry mustard
    • 1 bottle wheat beer
    • 2 cups chicken broth
    • 2 cups whole milk
    • 6 oz. shredded sharp white cheddar
    • 6 oz. shredded yellow cheddar
    • 2 tsp. Worcestershire
    • 2 cups diced ham

For garnish:

    • Cooked and crumbled bacon
    • Diced green onions
    • Shredded cheddar

Directions:

    1. In a large stockpot over medium heat, melt butter completely. Then add onion and garlic and cook for about 5 minutes until softened and slightly golden.
    2. Then whisk in flour, salt, pepper, and dry mustard. Cook for 3 to 4 minutes until flour is golden and has a nutty aroma.
    3. Add beer, whisking constantly, until mixture thickens a little, about 2 minutes.
    4. Add chicken broth and milk and stir. Bring to a boil, then reduce heat to simmer for 5 to 10 minutes until it thickens.
    5. Remove from heat and stir in cheeses, Worcestershire, and ham.
    6. Serve garnished with bacon, green onions, and shredded cheddar.
