Tatortot Egg Bake

What you need:

    • 1 lb. turkey breakfast sausage
    • 3 oz. fresh baby spinach, roughly chopped
    • 6 eggs
    • 1 cup whole milk
    • 8 oz. shredded sharp cheddar cheese
    • 30 oz. frozen potato rounds
    • Seasoning salt

Directions:

    1. In a large skillet, brown sausage over medium heat, crumbling while it cooks.
    2. Add spinach and cook until it wilts, about 1 to 2 minutes.
    3. Spread the sausage and spinach on the bottom of a greased 9x13-inch baking dish.
    4. In a large bowl, whisk together eggs and milk. Pour over top of sausage.
    5. Sprinkle the top with cheese and then layer the potato rounds evenly across the top and sprinkle with seasoning salt.
    6. Bake in a preheated 375 degree oven for 45 to 50 minutes or until egg has set.
    7. If the potatoes are browning faster than the eggs are setting, you can cover the dish with foil.
