Jalapeno Popper Chicken Soup

What you need:

    • 4 Tbsp. unsalted butter
    • 2 tsp. minced garlic
    • 2 tsp. onion powder
    • 4 Tbsp. all purpose flour
    • 3 cups milk
    • 1 1/2 cups chicken broth
    • 1/2 cup juice from pickled jalapenos
    • 2 cups shredded rotisserie chicken
    • 1 to 2 tsp. salt (to taste)
    • 4 oz. cream cheese
    • 1 cup shredded sharp white cheddar cheese
    • 1/2 cup sliced pickled jalapenos
    • Crispy tortilla strips, for serving

Directions:

    1. In a large stockpot, melt butter over medium heat. Add garlic and onion powders and saute for about 1 minute or until fragrant.
    2. Add flour. Stir until a thick paste-like substance forms (roux).
    3. Then gradually whisk milk into roux until smooth.
    4. Add chicken broth, jalapeno juice, chicken, salt, cream cheese, cheddar cheese, and jalapenos.
    5. Stir constantly until cheeses melt completely.
    6. Salt and pepper to taste, if needed, and serve topped with crispy tortilla strips.
