Kickin' Collard Greens

What you need:

    • 1 Tbsp. olive oil
    • 3 to 6 slices bacon, chopped
    • 1 large onion, chopped
    • 2 cloves minced garlic
    • 1 tsp. salt
    • 1 tsp. pepper
    • 3 cups chicken broth
    • 1 pinch red pepper flakes
    • 1 lb. collard greens, cut into 2-inch pieces (I get the precut, prerinsed kind)

Directions:

    1. Heat oil in a large stockpot over medium-high heat. Add bacon and cook until crisp.
    2. Remove and let drain on a paper towel-lined plate.
    3. Add onion to stockpot and cook until softened, about 5 minutes. Then add garlic and cook for 1 minute or until fragrant.
    4. Add collard greens and fry until they start to wilt.
    5. Pour in chicken broth. Add bacon, salt, pepper, and red pepper flakes.
    6. Reduce heat to low and cover. Simmer for 45 minutes or until greens are tender.
