Peppermint Hot Cocoa Crunch Donuts

What you need:

For the donuts:

    • 1 1/4 cup all purpose flour
    • 1/2 cup hot chocolate mix
    • 2 Tbsp. unsweetened cocoa powder
    • 1/4 cup brown sugar
    • 1 Tbsp. baking powder
    • 3/4 cup milk
    • 1 egg
    • 1/4 cup plain Greek yogurt
    • 1/4 cup unsalted butter, melted and cooled
    • 1/2 tsp. peppermint extract

For the glaze:

    • 1/2 cup semisweet chocolate chips
    • 2 Tbsp. unsalted butter
    • 2 tsp. honey or corn syrup
    • 2 Tbsp. milk
    • 1 tsp. vanilla extract
    • 1/2 cup crushed candy canes or peppermints
    • 1/3 cup marshmallow bits

Directions:

    1. In a large bowl, whisk flour, hot chocolate mix, cocoa powder, brown sugar, and baking powder.
    2. In a small bowl, whisk buttermilk, egg, yogurt, melted butter, and peppermint extract.
    3. Add wet ingredients to dry ingredients and stir until just combined.
    4. Pipe or spoon batter into a greased donut pan about 2/3 of the way full.
    5. Bake in a preheated 350 degree oven for 8 to 10 minutes or until a toothpick inserted in the middle comes out clean.
    6. Remove pan from oven and set on a wire rack. Cool in pan for 5 minutes, then remove from pan to the wire rack directly.
    7. While the donuts are cooling, make your glaze. In a medium saucepan, melt chocolate chips, butter, honey, and milk together over medium-low heat, stirring frequently.
    8. Once melted, stir in vanilla until mixture is smooth and glossy. Reduce heat to low.
    9. Dunk donut tops into glaze and then immediately sprinkle with crushed peppermint and marshmallow bits.
    10. Rest until glaze sets. Serve.
