Pumpkin Cream Cheese Cake
What you need:
For the cake:
- 1 can (15 oz.) pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1/2 cup vegetable oil
- 2 tsp. vanilla extract
- 2 cups all-purpose flour
- 1 Tbsp. pumpkin pie spice
- 1 tsp. baking soda
- 1 tsp. salt
For the cream cheese topping:
- 8 o. cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1 Tbsp. vanilla extract
Directions:
- For the cake: combine pumpkin, sugar, brown sugar, eggs, oil, and vanilla in a large bowl.
- Then slowly add in flour, pumpkin pie spice, baking soda, and salt. Mix until combined.
- Pour into a greased 9x13-inch baking dish.
- For the cream cheese topping: combine all ingredients until smooth and then spoon on top of cake mixture all around and swirl with a knife.
- Bake in a preheated 325-degree oven for 50 minutes or until the center is set.
- Cool before slicing.
