Peanut Butter S'mores Crunch Bars
What you need:
- 5 whole graham crackers
- 1 1/2 cups mini marshmallows
- 1 cup semisweet chocolate chips
- 1/3 cup light corn syrup
- 1 1/2 Tbsp. unsalted butter
- 1/4 cup creamy peanut butter
- 1 1/2 cups Rice Krispies cereal
- 1/2 cup mini peanut butter cups
Directions:
- Prepare an 8x8-inch baking pan with nonstick cooking spray and the line with parchment paper that overhangs the sides.
- Arrange graham crackers on the bottom of the pan. If you have to break some pieces to fill in the gaps, that is okay!
- Top graham crackers with marshmallows evenly and then bake in a preheated 375 degree oven for 7 minutes or until they are puffy.
- Let cool completely on a wire rack.
- In a large microwave safe bowl, add chocolate chips, corn syrup, and butter and microwave for 30 seconds at a time on half power until mixture is smooth. Stir well between each heating.
- Then stir in peanut butter and fold in Rice Krispies.
- Top marshmallows with peanut butter cups evenly and then press Rice Krispies over the top evenly.
- Cover and refrigerate for 1 hour or until firm.
- Life bars out of the pan using the overhang and cut into square or rectangle pieces.
- Store in an airtight container in the refrigerator.
