Cranberry Cream Cheese Muffins

What you need:

    • 1 cup unsalted butter, softened
    • 1 pkg (8 oz.) cream cheese, softened
    • 1 1/2 cups sugar
    • 1 1/2 tsp. vanilla
    • 4 large eggs
    • 2 cups all-purpose flour
    • 1 1/2 tsp. baking powder
    • 1/2 tsp. salt
    • 2 cups fresh or frozen cranberries

Directions:

    1. In a large mixing bowl, cream together butter, cream cheese, sugar, and vanilla.
    2. Add eggs one at a time, beating between each addition.
    3. In a separate bowl, combine flour, baking powder, and salt.
    4. Slowly add flour mixture into butter mixture.
    5. Fold in cranberries gently.
    6. Fill paper-lined muffin cups with batter 3/4 of the way full.
    7. Bake in a preheated 350 degree oven for 20 to 25 minutes or until a toothpick comes out of the center clean.
