On Sunday, November 20, 2011, Mikkayla Johnson, Jessica Hoffman, Tylee Evans, and Mikayla Nepper went to Sioux Falls for training for a competition that will occur in March at Mitchell Technical Institute.
The competition is for a culinary competition called Pro-Start. Food Service Director Joe Schaffer drove them to Sioux Falls, students were met at the event by Culinary Arts Instructor Coleen Keffeler.
During the experience, team members learned how to determine the cost of a recipe, using a technique previously taught to them in Culinary Arts. They were also taught the proper way to fabricate a chicken, which is basically cutting the chicken into mirrored pieces.
To keep chicken pieces even, the chef said, “Cutting along the spine of the chicken is key!”
Cutting up a chicken was a new experience for the team, and Hoffman even got to demonstrate the process.
In agreement, the girls said, “We all had a great time and learned a lot!”
Pro-Start Training helped to prepare the participants for the March competition.
