A Swiss dish which I learned from Mama Oeler. We love this with bratwurst
The day before, Boil 1 lb. potatoes 30 min. before dinner, peel and coarsely grate potatoes.
1 med. onion, chopped
3 Tbsp. butter, bacon drippings or oil
1 tsp. salt
1 Tbsp. caraway seed
In heavy skillet, melt butter. Add onion and sauté until limp. Put grated potatoes in pan, sprinkle with salt. Press down with spatula. You are not going to stir the potatoes but you do need to watch closely for the first few minutes and reduce the heat to low when potatoes begin to sizzle. Add the caraway seeds and continue to cook until nice brown crust forms on bottom.
